Red Curry Chicken


Now why have I never thought of this, I just love thai food



I cooked the chicken in a red curry sauce at 325 for the first half hour


Then I added the vegetables to the oven for the last half hour. I used asparagus, bok choy and peppers. You really are supposed to boil or steam bok choy but I love it roasted
