Cashew Chicken and Spaghetti Squash



OMG so easy to make

I'm sure you've noticed I like chicken. Its not that I don't like anything else its more my lazy cooking habits, chicken is so versatile

This is my variation on Cashew Chicken Pasta

I don't eat pasta, its so filling and sits inside me like a lead balloon. I'm always looking for alternatives

This is how it's done:

Add a 1/4 cup flour and ground pepper in a bag, put in chicken thighs and coat



 
Fry in a pan with a little olive oil, a couple of minutes each side
 



Add a 1/4 cup of soy sauce, 1 tbsp of wine vinegar, 2 tbsp of ketchup, 1 tbsp of brown sugar and garlic in a pot




Throw chicken thighs in and coat




Transfer to baking dish and put in the oven around 350




Cut spaghetti squash in half and gut




Place face down on baking sheet, it will not only bake but steam as well, rub a small amount of brown sugar inside for added flavor



I let chicken cook for about 25min then put squash in the oven, at the same time add the cashews to the chicken




Looks great!




Scrape a fork through the squash to get the pasta




Voila!
